Tempering Chocolate at Home Without a Marble Slab

Tempering is the difference between a truffle that snaps and shines and one that smears grey fingerprints on the box. It is not difficult, it is just unforgiving about temperature. You do not need a marble slab, a tempering machine or a professional kitchen. You need a digital thermometer that reads to 0.5 degrees, a heatproof bowl, and about forty minutes.

What tempering actually is

Cocoa butter is a mixture of triglycerides that can solidify into six distinct crystal structures, conventionally numbered I through VI. They melt at different temperatures and behave completely differently:

Form V is the only one you want, and left alone chocolate will not choose it. Tempering means melting out every crystal, cooling until form IV and V both start to appear, then warming just enough to melt IV back out while leaving V behind as seed. Those seeds then template the rest of the batch as it sets.

The temperature curves

Three numbers per chocolate: melt, cool, working. Hold the working temperature while you dip or mould.

Milk and white run cooler because milk fat dilutes the cocoa butter and lowers the whole crystallisation range. Milk solids also scorch: take white chocolate over about 45 C and the proteins start to brown and the texture goes grainy on you.

Your thermometer is the whole apparatus, so it is worth knowing whether it is honest. Check it in an ice bath, which should read 0 C, and in boiling water adjusted for your altitude. Practical calibration guidance for household instruments is published by the NIST Office of Weights and Measures, and a two dollar error in your thermometer is a two hundred dollar error in a batch of bonbons.

Method 1: seeding, the one to learn first

  1. Chop 500 g of couverture finely and set aside 150 g of it. Chocolate callets or discs work best because they are uniform.
  2. Melt the other 350 g over a barely simmering water bath, stirring, until it reaches the melt temperature above. Keep the bowl clear of the water and keep every drop of steam out.
  3. Take the bowl off the heat, dry the base, and stir in the reserved 150 g in three additions. The unmelted chocolate is already in form V and it is doing the seeding for you.
  4. Keep stirring until the mixture reaches the cool temperature. Slow, steady, scraping the sides. Do not whip air into it.
  5. If solid pieces remain, strain them out or let residual heat finish them. Then warm the bowl gently, in five second bursts in a microwave or two seconds over the water bath, to the working temperature.
  6. Test before you commit the batch.

Method 2: tabling, if you have a stone worktop

Melt all of the chocolate to the melt temperature. Pour two thirds onto a cool granite or marble surface and work it with an offset spatula and a scraper, spreading and gathering, for three to five minutes until it thickens and reaches the cool temperature. Scrape it back into the remaining warm third and stir. The blend should land close to the working temperature. Tabling gives excellent control and makes a mess; seeding gives good control and makes none.

Method 3: sous vide, for repeatability

Vacuum-seal or use a zip bag with the air pressed out, drop it in a water bath at 45 C until fully melted, massage the bag, drop the bath to the cool temperature until the chocolate reaches it, then raise the bath to the working temperature. It is slow and close to foolproof, and it is the method to use if you temper the same recipe repeatedly.

Testing the temper

Dip the tip of a knife or a strip of baking parchment, set it aside at 20 C, and wait five minutes. Tempered chocolate will be set, matte turning to gloss, and it will snap. Untempered chocolate will still be tacky at ten minutes, or will set with grey streaks. Test before you fill a mould, not after.

The four things that go wrong

  • Water. A single drop seizes the batch instantly, because sugar dissolves and pulls the mixture into a grainy paste. Dry every tool. If it seizes, you cannot temper it, but you can rescue it into a ganache or a hot chocolate base by adding more liquid deliberately.
  • Overheating. Past 50 C dark chocolate scorches and the flavour goes flat and burnt. Past 45 C milk and white go grainy.
  • A warm room. Above about 22 C ambient, tempered chocolate will not set properly and will bloom within days. Below about 15 C it sets too fast and can crack. Aim for 18 to 20 C with low humidity.
  • Chocolate chips. Most supermarket chips contain less cocoa butter and added stabilisers precisely so they hold their shape in a cookie. That makes them poor candidates for tempering. Buy couverture, which is defined by a higher cocoa butter content and is what every chocolatier actually uses.

Storage after you are done

Tempered work keeps its gloss for months in a sealed container at 15 to 18 C, away from light and odour. Do not refrigerate it: condensation on removal causes sugar bloom.
