Why Chocolate Turns White, and How to Store It Properly
You open a box that has been in the cupboard since the holidays and the truffles have gone grey and dusty. The instinct is to throw them out. In almost every case that is unnecessary: what you are looking at is bloom, a physical change in fat or sugar, and it is not mold, not spoilage and not dangerous.
Two kinds of bloom, opposite causes
Fat bloom
Fat bloom is soft, greyish, sometimes marbled or streaky, and it wipes to a slight smear under a warm thumb. It happens when cocoa butter migrates to the surface and recrystallises into the coarse, dull form VI. Two things cause it: chocolate that was never properly tempered in the first place, and chocolate that was stored warm or through repeated temperature swings, so that some of the fat melted and re-set outside the intended crystal form.
Nut-filled and praline centres are especially prone, because the oils in the filling slowly migrate outward through the shell and destabilise it. That migration is one reason gianduja and nut-centred bonbons carry shorter recommended shelf lives than plain ganache.
Sugar bloom
Sugar bloom is hard, gritty and crystalline, and it does not smear. It happens when moisture condenses on the surface, dissolves some of the surface sugar, then evaporates and leaves the sugar behind as visible crystals. The classic cause is taking chocolate out of the fridge into a warm kitchen: the cold surface pulls condensation out of the air immediately. Storing chocolate in a humid room does the same thing more slowly.

Is bloomed chocolate safe to eat?
Yes. Bloom is a texture and appearance fault, not a microbiological one. Chocolate is a low-moisture, high-fat food with a water activity too low to support most microbial growth, which is why plain bars are shelf stable for a year or more. What bloom does cost you is snap, gloss and a certain amount of aroma, and bloomed chocolate often tastes slightly dusty because the surface fat texture changes how it melts.
The exception is anything with a wet centre. A cream or fruit ganache, a caramel with high water content or a fresh filled truffle is a different food safety proposition altogether, with a shelf life measured in days to a couple of weeks. Storage and time-temperature guidance from the US Food and Drug Administration is the right reference for those, and the shop that made them should tell you a use-by date. If they cannot, that is informative.
Storing chocolate properly
- Temperature: 15 to 18 C (59 to 65 F). Stable matters more than exact. A steady 20 C beats a cupboard that swings between 16 and 26.
- Humidity: below 55%. High humidity drives sugar bloom and, over long periods, can allow surface mold on inclusions like dried fruit.
- Sealed and opaque. Cocoa butter absorbs ambient odour readily. Chocolate stored next to onions, coffee or a scented cleaning product will taste of them within weeks. Light also accelerates oxidation of the fat, so keep bars in their foil, in a closed box.
- Away from the fridge, normally. A domestic refrigerator is cold, humid and full of smells, which is three problems at once.
When refrigeration is the right call
In a summer kitchen above 25 C you have no better option, and in that case do it properly. Seal the chocolate in an airtight container or a zip bag with the air pressed out. When you take it out, leave it sealed on the counter for several hours until it has come fully to room temperature before you open it. That way the condensation forms on the bag and not on the chocolate.
Fresh filled truffles and cream ganaches should be refrigerated as a matter of course, and eaten within the window the maker gives you. Bring them to about 18 C before eating, since cold flattens flavour dramatically.
Freezing
It works for plain bars and for finished bonbons if you are strict about it, and it is the standard trick for holding seasonal production. Wrap airtight, freeze, then thaw in stages: freezer to fridge overnight, fridge to counter for several hours, and only then unwrap. Rushing any of those steps gives you sugar bloom. Do not freeze anything with a high-water filling; the ice crystals wreck the emulsion.

Shipping chocolate in summer
This is where most gift purchases go wrong. Above roughly 27 C a bar will soften in transit and re-set bloomed, and a shipping container in August can hit 50 C. Reputable shops switch to insulated packaging with gel packs and hold orders for Monday to Wednesday dispatch during hot months, or they simply pause shipping.
