Why Chocolate Blooms (and How to Prevent It)

That pale, whitish film that sometimes appears on a chocolate bar left too long in a pantry drawer looks like mold to a lot of people, understandably, but it is almost always something far less alarming called bloom. There are two distinct kinds, they have different causes, and neither one means the chocolate has gone bad.

Fat bloom is the more common of the two and shows up as a streaky, grayish-white haze that feels slightly slick to the touch. It happens when chocolate warms enough for some of its cocoa butter to melt and migrate to the surface, then re-solidify there in a looser, less organized crystal structure than the tight arrangement good tempering creates. According to Michigan State University Extension, fat bloom is closely tied to temperature swings, particularly when chocolate is stored somewhere that regularly climbs above about 75 degrees Fahrenheit, since that is warm enough to disturb the fat’s crystal structure without fully melting the bar. Chocolate that was never properly tempered in the first place is also more prone to fat bloom, because it starts out without the stable crystal network that resists this kind of migration.

Sugar bloom looks similar at a glance but feels dry and slightly gritty rather than slick, and it does not melt at body temperature the way fat bloom does. It happens when moisture, often from condensation, lands on the chocolate’s surface and dissolves a bit of the sugar there. As that moisture evaporates, the sugar recrystallizes on the surface in larger, rougher crystals than the fine sugar milled into the original chocolate, creating the same kind of pale, uneven look but through an entirely different mechanism. This is why chocolate pulled straight from the refrigerator into a warm, humid kitchen is especially prone to sugar bloom: the temperature difference causes condensation to form on the cold chocolate the moment it hits warmer air.

Both forms of bloom are cosmetic and textural problems rather than safety problems. As Michigan State’s extension guidance notes, bloomed chocolate remains safe to eat, even though it looks unappetizing and its texture has changed. The flavor is largely unaffected too, particularly if the chocolate is going to be melted or used in baking rather than eaten on its own, since melting erases the surface appearance entirely.

Preventing bloom at home comes down mostly to storage discipline. Guidance from Iowa State University Extension recommends keeping chocolate in a cool, dry place, ideally somewhere in the 60s Fahrenheit, in an airtight container to block out both humidity and stray kitchen odors that cocoa butter can absorb. Refrigeration is generally discouraged for everyday storage because the humidity inside a typical fridge is often higher than chocolate prefers, and the temperature swing when chocolate comes back out invites the very condensation that causes sugar bloom. If refrigeration is unavoidable, such as in a hot climate without air conditioning, wrapping chocolate tightly and letting it come to room temperature slowly, still wrapped, before opening helps minimize condensation.

Bloomed chocolate is also usually salvageable rather than something to throw out. Because both fat and sugar bloom are surface phenomena rather than changes to the chocolate’s core composition, remelting the chocolate, whether for dipping, baking, or a fresh batch of ganache, generally restores a smooth, uniform appearance once it resolidifies, provided it is retempered properly rather than just melted and left to set on its own. A bloomed bar is rarely worth discarding when a double boiler and a few minutes of patience can put it right back to work. The one situation worth extra caution is chocolate that has been stored somewhere genuinely damp for a long stretch, such as a humid basement, since prolonged moisture exposure can eventually invite mold or off flavors well beyond ordinary sugar bloom. In that case, a sniff test and a close look for fuzzy spots rather than a uniform dusty haze will tell you whether you are dealing with harmless bloom or something that actually belongs in the trash.
