Cacao percentage decoder
A 70% bar is not 70% cocoa solids, and the number says nothing about quality. This breaks the label down into what is actually in a serving, and lets you compare two bars.

Estimates from typical composition, not a substitute for the nutrition panel. The formulation style setting matters: two bars at the same percentage can differ by 15 percentage points of cocoa solids depending on how much cocoa butter was added back, and that is what you taste. Read the ingredient list, which is ordered by weight. If cocoa butter appears before sugar, you are holding a butter-forward bar.

The percentage counts everything derived from the cacao bean: cocoa mass plus any extra cocoa butter added for flow. It does not tell you how that total splits between the two, and that split is what decides whether a bar reads as intense or mellow. This tool models the split from typical formulations, so treat the figures as a good estimate rather than a nutrition panel.
