Good peanut brittle has two things going on at once: a genuinely hard, glassy snap, and a light, slightly aerated crunch rather than the dense feel of a solid sugar block. Getting both at the same time depends on hitting a precise cooking temperature and then moving fast once the pan comes off the heat.
The sugar and corn syrup base needs to reach the hard-crack stage before anything else happens. According to the Exploratorium’s Science of Candy guide, hard-crack falls between 300 and 310 degrees Fahrenheit, the point where syrup has almost no remaining moisture and forms hard, brittle threads when dropped into cold water. Nut brittles are specifically cooked to this stage rather than any lower one, since a syrup pulled off the heat too early still has enough water content to stay chewy or tacky once it cools, instead of shattering the way finished brittle should. A candy thermometer clipped to the pot is far more reliable here than color alone, since brittle’s caramel color develops gradually across a wide temperature range, while the difference between hard-crack and a stage just below it can be only a few degrees.
Peanuts typically go into the pot partway through cooking, since raw or roasted nuts added too early can scorch during the long cook time it takes sugar to climb toward 300 degrees. Adding them once the syrup is close to its final temperature lets them warm through and toast slightly in the hot syrup without burning, while still leaving enough time for their flavor to infuse the batch.
Baking soda is what gives brittle its characteristically light, aerated crunch rather than a dense, glassy texture. Stirred into the hot syrup right after it comes off the heat, the baking soda decomposes almost instantly at that temperature, releasing carbon dioxide gas that becomes trapped as tiny bubbles throughout the thick syrup, the same basic reaction that produces the foamy structure in honeycomb candy and cinder toffee. Because that reaction happens the moment the baking soda is stirred in, and the syrup begins setting up within seconds afterward, there is only a brief window to pour and spread the brittle before it stiffens in the pan rather than on the baking sheet.
This is also where crystallization can quietly ruin an otherwise well-cooked batch, since brittle’s sugar syrup is just as prone to seizing into a grainy texture as caramel is. The Exploratorium’s notes on candy chemistry point out that corn syrup acts as an interfering agent, its glucose chains getting in the way of sucrose molecules trying to reorganize into crystals, which is exactly why so many brittle recipes lean on corn syrup alongside plain sugar rather than using sugar alone. Stirring too vigorously once the syrup begins to boil, or letting undissolved sugar crystals cling to the pan’s sides, can trigger the same grainy texture in brittle that it does in any other cooked sugar candy.
Once the baking soda is folded in, the brittle needs to be poured and spread thin within moments, using a greased spatula or the back of a spoon to stretch it toward the edges of the baking sheet before it firms up. Waiting even a minute too long leaves a lumpy, uneven sheet that is hard to spread and breaks unevenly later. Once fully cooled and hardened, usually within thirty minutes to an hour, brittle should be broken into pieces and stored in an airtight container, ideally with parchment between layers, since exposure to humidity softens brittle’s sugar glass and turns a crisp piece sticky within a day or two. Kept dry and well sealed, a batch will hold its crunch for a couple of weeks, though it is worth checking on periodically if your kitchen tends to run humid.
